Montreal Turkey Burgers

Specially created for pairing with Mariana Vineyard 2007 Petite Sirah

Ingredients:
1 pound ground turkey
1 tablespoon McCormick Grill Mates Montreal Chicken Seasoning
4 hamburger rolls

Directions:
Mix ground turkey and Chicken Seasoning in medium bowl until well blended. Shape into 4 patties.

Grill over medium heat 4 to 6 minutes per side or until burgers are cooked through (internal temperature of 165 degrees). Toast rolls on the grill, open-side down, about 30 seconds.

Serve burgers on toasted rolls. Garnish with desired toppings and condiments.

Makes 4 servings.

Pumpkin and Apple Soup

Specially created for pairing with the Mariana Vineyard 2008 Chardonnay

Ingredients:
3 tablespoons butter
1 cup finely chopped onion
2 teaspoons McCormick Ginger Ground
1 can (15 oz) pumpkin
1 cup chunky applesauce
3 1/2 cups chicken broth
3/4 cup heavy cream

Directions:
Melt butter in large saucepan on medium heat. Add onion; cook and stir 5 minutes or until softened. Stir in pumpkin pie spice and ginger.
Stir in pumpkin, applesauce and broth until well blended and smooth. Bring to boil, stirring occasionally. Reduce heat to low; simmer 5 minutes. Remove from heat. (If a smoother soup is desired, place mixture in batches in blender container; cover and blend until smooth.)
Stir in cream. Heat gently before serving, if necessary.

Makes 6 (1-cup) servings.

Roasted Garlic-Crusted Beef Rib Roast

Specially created for pairing with the De Beaumont Cellars 2007 Red Meritage.


Ingredients:
1 beef rib roast (2 to 4 ribs), small end, chine (back) bone removed (6 to 8 lbs.)
2 tsp. cracked black pepper
2 medium heads garlic
2 Tbsp. olive oil
1/2 tsp. dried thyme leaves
1/4 tsp. salt
1/8 tsp. white pepper

Directions:
Heat oven to 350 degrees. Place roast, fat side up, on rack in shallow roasting pan. Rub all sides of roast with cracked black pepper. Cut about 1/4 inch off from the stem end of each garlic head, exposing the cloves. Remove the outer papery skin, leaving the head intact. Place garlic in center of a 12-inch squire of heavy-duty aluminum foil; drizzle with oil and fold up edges to seal tightly. Place garlic packet alongside roast in pan.

Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat or touching bone. Do not add water or cover. Roast beef and garlic head in 350 degrees oven. Remove garlic from oven after 45 minutes; cool slightly. Continue roasting beef 1 1/4 to 1 1/2 hours for medium rare; 1 3/4 to 2 hours for medium doneness.

Meanwhile, squeeze garlic cloves from husks into medium bowl. Mash garlic with fork until smooth. Stir in thyme, salt and white pepper; set aside.

Remove roast when meat thermometer registers 135 degrees for medium rare; 150 degrees for medium. Transfer roast to carving board. Rub roast with garlic mixture; tent loosely with aluminum foil. Let stand 15 to 20 minutes. (Temperature will continue to rise about 10 degrees) Sprinkle roast with reserved leeks and carve into slices. Serve with sauce.

Makes 6 to 8 servings.

Rosemary Roasted Chicken

Specially created for pairing with the De Beaumont Cellars 2008 White Meritage.


Ingredients:
1 whole chicken (about 3 pounds)
1 tablespoon olive oil
2 teaspoons McCormick Rosemary Leaves, crushed
2 teaspoons seasoned salt
1/2 teaspoon McCormick Thyme Leaves

Directions:
Preheat oven to 375 degrees. Place chicken on rack in foil-lined roasting pan. Brush with oil.

Mix rosemary, seasoned salt and thyme in small bowl. Rub evenly over entire chicken.

Roast 1 to 1 1/2 hours until chicken is cooked through. Serve with Perfect Chciken Gravy, if desired.

Makes 6 servings.

Southwest Beef Pizza

Specially created for pairing with the Fleur Bleu 2006 Zinfandel

Ingredients:
1 lb. ground beef
1/4 tsp. salt
1 large (16oz) prepared pizza crust
1-1/4 cups mild, thick and chunky salsa
1-1/2 cups (6oz) shredded Mexican cheese blend or Monterey Jack cheese
1 can (4oz) diced green chiles, drained well
2 medium plum tomatoes, seeded and coarsely chopped
1/3 cup thin red onion slivers
2 Tbsp. chopped fresh cilantro

Directions:
Preheat oven to 450 degrees F.

In large skillet, brown ground beef over medium heat 8-10 minutes or until no longer pink. Pour off drippings. Season with 1/4-tsp salt.

Place bread shell on ungreased baking sheet.

Spread salsa over shell. Sprinkle with half of the cheese. Top with beef, chilies, tomatoes, and red onion. Sprinkle with remaining cheese.

Bake in oven 11-13 minutes or until cheese is melted.

Sprinkle with cilantro. Cut into 8 wedges and serve hot.

Makes 4 servings.

Bavarian Chops

Pairs great with the Pied Violet 2007 Reserve Merlot

Ingredients:
4 boneless pork loin chops, about 1/2-inch thick
2 tablespoons flour
1 teaspoon butter
1/2 cup chopped green onion
2 garlic cloves, minced
8 ounces mushrooms, sliced
1/2 teaspoon thyme
8 ounces beer, room temperature
Salt
Freshly ground black pepper
Butter noodles (optional)
Minced fresh parsley (optional)

Directions:
Lightly flour chops. Melt butter in nonstick skillet over medium-high heat until foaming. Brown chops quickly on both sides. Remove, reserve.

Add green onion, garlic, mushrooms and thyme; saute for 2-3 minutes, until onion is soft.

Return chops to skillet, add beer; bring to a boil. Reduce heat, cover and simmer 7-8 minutes. Season with salt and pepper.

Serve with buttered noodles, garnished with parsley, if desired.

Makes 4 servings.

Slow Cookers Beef Stroganoff

Specially created for pairing with the Pied Violet 2006 Reserve Cabernet Sauvignon.



Ingredients:

2 pounds beef stew meat, cut into 1-inch cubes
1 package (8 oz) mushrooms, halved or sliced
1/2 cup chopped onion
1 package McCormick Slow Cookers Beef Stroganoff Seasoning
1 cup water
1 cup sour cream

Directions:

Place beef, mushrooms and onion in slow cooker.

Mix seasoning and water until blended. Pour over beef and vegetables; toss to coat well. Cover.

Cook 8 hours on LOW or 4 hours on HIGH. Stir in sour cream until well blended. Cover. Cook 10 minutes longer on LOW. Serve over cooked egg noodles, if desired.

Makes 10 (2/3 cup) servings.

Apple-Glazed Chicken Drumsticks Recipe


Specially created for pairing with the Fleur Bleu 2008 Chardonnay

Ingredients

4 chicken drumsticks, skin-on or skinless
2 apples, cored and sliced into eighths

Marinade:
1/4 cup apple butter
1/4 cup molasses
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Directions

In medium bowl, stir together all ingredients for the marinade. Add the drumsticks and toss to coat. Cover and refrigerate for 15 minutes.

Preheat the broiler. Line a broiler pan with aluminum foil and then set the drumsticks in it. Broil for 20-30 minutes, turning the drumsticks occasionally and brushing them with marinade.

*Can also be cooked on the grill.

Serve with apple slices. Makes 4 servings.

New Emails and New Office Hours

Now that WineShop At Home has perfected their own newsletter, I've decided to go ahead and give it a try. So please bear with me as you may be receiving more than one email from me for a couple of months. I have also decided to have set office hours this year. Right now, as I'm still trying to get my youngest one potty-trained so she can go to school, I will have minimal set hours, but will check my emails and work on orders as I can fit it in. Right now my office hours will be Wednesdays from 9:30am - 11:30am. During this time, I will answer emails and phone calls, as well as making phone calls and working on orders and host packets. Let me know if I can help you with any wine needs.
